Feijão de Lima is a thrifty cook’s favourite bean. Among the earliest domesticated plants on earth, the lima bean is an inexpensive source of low-fat protein, dietary fibre and is a good source of folate, iron and zinc. Originating from the highlands of Peru, the lima bean is found at Guiterrero Cave, renowned for sheltering the oldest cultivated plants in the New World, dating back some 8,000 years, or more. Also known as the butter bean, the lima bean has a velvety, plush texture and a mellow, creamy flavour, complementing soups, salads and casseroles. You can soak it, dry it, or mash it. The versatile pulse combines well with fetta, spinach, mint and red capsicums, or chilies. A mouthwatering lima bean mash works wonders on the digestive system, as well as keeping the blood sugar levels stable and providing magnesium and calcium, thus enhancing bone strength. Good for improving the acid/alkaline balance in the body, this hearty food promotes healthy organ functioning. Nutritious and bursting with flavour, lima bean dip with pecorino, black pepper and lemon, will delight your taste buds and satisfy the senses.
