After attending a fermentation seminar, our fermenter-in-chief aka Son (of Lewis & Son fame) arrived home bubbling with excitement and enthused to ferment something, anything, but what.  The fridge contained red cabbage, carrot, apple, onion, garlic and chilli.  Which surprisingly enough made a sensational kraut that can replace rotkohl mit apfel, which as any German will tell you is a must alongside meats; and they're right.
