INGREDIENTS

2 slices whole wheat or fresh bread of your choice

Store-bought or homemade Mayo (recipe below)

Romaine lettuce

1 vine ripe tomato, sliced

1/4 avocado, mashed

4 slices Continental Kosher Smoked Lamb Bacon (or facon as we call it)

Instructions:

To cook the Continental Kosher Butchers smoked lamb bacon, either fry strips in a pan on the stovetop until crispy, or place strips on a foil and baking paper lined sheet pan or baking tray. Cover with baking paper and foil (paper on the inside and foil on the outside). Place in a 200 C degree oven for 15-18 minutes, or until crisp.

CKB HACK: Tired of bacon falling out of your sandwich and missing bacon in every bite? Try weaving the bacon like a basket and using the baking technique. Bake at 200 C until crispy and the edges curl slightly.

Sandwich Assembly

Place the bread open face. Spread a little mayo on both sides. Add a layer of smashed avocado, lettuce, and sliced tomato. Add a little salt and pepper over the tomato. Place the crispy lamb bacon slices on top of the tomato, lettuce, and avocado, then close up the sandwich and serve.
