Homemade Chimichurri Recipe
Ingredients:
50 g parsley
½ cup wine vinegar
2 ½ cups extra virgin olive oil
1 tablespoon ground red chilli pepper or spicy paprika
2 tablespoons Lewis & Son Oregano dried leaves
1 tablespoon Lewis & Son Sweet Paprika
Juice of 1 lemon
Recipe:
Wash, dry and very finely chop the parsley. Put in a deep bowl aside.
Peel and chop garlic as small as possible and add to the bowl.
Add spices: red chilli pepper, oregano, paprika, salt and pepper.
Add in lemon juice and mix well to make sure all of the spices and parsley become combined. Be careful not to let the seeds fall in.
Add olive oil and wine vinegar and mix well.
Keep in an airtight container. Best after a few days.
