Crispy Vegetable Latkes

Ingredients:

  • 1 potato

  • 3 carrots

  • 1 zucchini

  • 1/4 cup chopped spinach

  • 1 onion, diced and fried

  • 2 tablespoons of ground flaxseeds mixed with 6 tablespoons of water

  • 1/2 cup flour

  • 1 tablespoon kosher salt

  • Olive oil for frying

Directions:

  1. Dice and sauté the onion until golden brown.

  2. Grate the potato, carrot, and zucchini.

  3. In a mixing bowl, combine the diced and fried onion, grated vegetables, chopped spinach, flaxseed mixture, flour, and kosher salt. Mix well until the ingredients are fully incorporated.

  4. Heat oil in a frying pan over medium heat.

  5. Using a â…›-cup measuring cup or a spoon, scoop up the latke batter and carefully place it in the hot oil, shaping it into a flat pancake shape.

  6. Fry the latkes for 2–3 minutes on one side, then flip and fry for another 1–2 minutes on the second side, or until golden brown and crispy.

  7. Remove each latke from the pan and place it on a plate lined with paper towels to absorb any excess oil.

  8. Repeat the frying process with the remaining batter, adding more oil to the pan as needed.

  9. Serve the latkes immediately while still warm.
